Two Famed Mixologists Share Insights
In the last few years, the kitchen has expanded to the space behind the bar and the secrets within the glass. As cocktail creation has become more of an art form, the level of education and dedication behind the bar has led to the advent of “mixologists,” whose craft and competence are pushing success in this industry to new heights. As two of the most recognizable names in the industry, Master Mixologists Dale DeGroff and Tony Abou-Ganim have helped cultivate the art of mixology and its role as the life force behind every great cocktail list.
Masters of the Mix
Dale DeGroff began his career decades ago, spanning famous employment at New York’s Rainbow Room to earning the appellation “King of Cocktails,” through award-winning menu creation, education and publication of books such as “The Craft of the Cocktail.” Today, one of the world’s leading authorities on life behind the bar, DeGroff provides beverage consulting and bar training seminars to renowned establishments when he is not working on his latest venture as the president and founder of The Museum of the American Cocktail, a non-profit organization dedicated to providing education in mixology and history of the American cocktail.

As today’s bar and restaurant consumers look for more intriguing flavors and more quality beverage and food offerings, DeGroff and Abou-Ganim have developed keen insight into trends and movements in cocktails. In fact, the two will share their wisdom in a joint keynote address at the Nightclub & Bar Beverage and Food Convention & Trade Show (know as “The Show”) in Las Vegas, March 4-7 (www.nightclub.com). The event this year is co-located with the International Las Vegas Restaurant Show and the Las Vegas Hospitality Expo.
“Flavors from the East like ginger, lychee are hot because Pan-pacific cuisine is hot,” DeGroff says. “Likewise the flavors and ingredients from Mexico and South America are popular –– cachaça, Pisco, premium tequilas. Berries are showing up in all the flavored spirits and fresh berries at the bar are sure to figure more and more in drinks over the next couple years … roasted tropical and other fruits like pineapple and apple included in cocktail recipes.”
“I really hate to refer to the use of better, fresh ingredients as a ‘trend,’ although I guess you can say it is,” Abou-Ganim says. “I would rather refer to it as returning to the roots of mixology. I truly believe as our guests continue to be exposed to proper, well-crafted cocktails, they will no longer settle for artificial, imitation spirits, juices and mixes. As guests become more demanding about the tipples they choose to consume, they also will become more demanding about where they choose to consume them. I look at this as a great opportunity, be a leader not a follower.”
“The future is in fresh ingredients and a culinary approach to cocktail and the operations that don’t move in that direction in some way will eventually suffer loss of business and will not survive,” DeGroff says.
“I truly think that more and more we will return to the lost and forgotten classic cocktails and return them to the spotlight,” Abou-Ganim says. “Drinks such as the Aviation, Monkey Glad and the Blood & Sand will once again take their rightful place on the cocktail menu. I think the next 5 years will be a true return to the ‘Golden Age of Cocktails’ –– one like we have not experienced in this country since the dry days of Prohibition.
“Bartenders will pursue the craft as the art it truly is and approach it as a profession and not a part-time job between acting gigs. I think we will experience some wild and adventurous drinks as bartenders continue to push their creative limits. When the dust settles, I truly think we will come back to where those who came before us started ¬¬–– making great classic cocktails for discerning patrons looking to escape from, if only for a couple of hours, the weight of the world.”

Universal Music Group Selects Promo Only For Digital Distribution To Radio(June 22, 2004) Promo Only, Inc., along with technology partner, Destiny Media Technologies Inc., today announced that it has signed a contract with Universal Music Group (UMG) to securely distribute UMG's new release audio to US radio stations via the Promo Only MPE System.
Under the agreement, Universal will use the Promo Only MPE System to electronically deliver both preview and broadcast-quality audio files to every US major market radio station, simultaneously with traditional physical CD delivery. Promo Only, which provides the industry standard for CD music service, projects that soon after launch the system will reach 90% of major market US radio stations; and will expand in time to include trusted users outside of radio.
Today, all pre-release music is delivered on physical CD.

Orlando, FL (May 2, 2003) – Promo Only Inc., the nation’s leading provider of promotional music and music video, today confirmed that Promo Only has been selected to produce the MTV2 music television network’s upcoming Memorial Day music video marathon.
This marks the second collaboration between the two music video companies: their first pairing, MTV2’s New Year’s Eve Monster Mix 2002 (also programmed and produced by Promo Only), received a record response – due in no small part to the show’s signature beat-mixed music video format.
“It’s nice to know we weren’t just another one-night stand,” said Promo Only video program manager, Nick Allard of the rematch. “Seriously, we couldn’t be more proud – or pleased -- to find ourselves back on the airwaves alongside MTV2.”
Scheduled to premiere Saturday, May 24th between the hours of 2 p.m. and 6 p.m., the Memorial Day Monster Mix will feature a two-hour segment of beat-mixed hip-hop video, followed by an additional two-hour beat-mixed block of dance music video. The Monster Mix will also air at intervals throughout the Memorial Day weekend, with future airings of the program, in one-hour blocks, scheduled to run throughout the summer.

Entertainment Television reality-sitcom star Anna Nicole Smith’s new music video; produced by Promo Only (from outtakes of the show provided by E! Television as part of a campaign designed to lure viewers to the controversial show’s second season.

Fans of Anna Nicole Smith will also recognize many of the star’s more memorable – and colorful -- quotes from the show layered throughout the track’s pulsing groove.

Orlando, FL (December 3rd, 2001) - Promo Only, Inc, the nation's leading promotional music and music video service, today announced its original video dance remix of Arista recording artist, Usher's "U Got It Bad" is now in rotation on both the MuchMusic USA and MuchMusic Canada music video channels.
The video, directed by Little X (Destiny's Child's "Bootylicious," Foxy Brown's, "Oh Yeah," Kardinal Offishal's "Ol Time") and re-edited by the Promo Only video team of Tammie Helmick and Grant Salisbury, debuted last month on MTV Europe. With the addition of "U Got It Bad" to MuchMusic's programming, the video will now be available for viewing by an audience of over 180 million households, spanning two continents and 43 territories.
"This certainly validates what we've believed all along - that we have some extremely talented and creative people here producing a truly world-class product," said Pete Werner, executive programmer, Promo Only. Specifically designed to cater to the British 2-Step genre - a dance-niche that joins U.K. garage with R&B - the "U Got It Bad" video remix aims to introduce Usher to the world stage.

What may come as a surprise to many is that much of the video product we release is actually created by these very talented individuals. We are constantly working very closely with the major labels in the development and production of original video content.”
“Transforming ‘U Got It Bad’ — a mid-tempo R&B number — into a high-energy dance track would take the involvement of many,” added Nick Allard, video program manager, Promo Only. “We owe much to the original inspiration of video editors, Tammie Helmick and Grant Salisbury — and a huge debt to Arista president, L.A. Working with what was essentially footage shot for the original ballad’s video release, Allard and his team of video editors turned to their AVID digital studios for the wizardry necessary to synchronize the original video with a new audio dance remix.
“We each thought the remix itself — the Soul Power remix — was a great choice,” continued Allard. “Still, taking video meant for a ballad and tracking it over audio that is over twice as fast as the original takes a few trips to the drawing board.”
Produced to cater to the British Two-Step genre — a dance-niche that bridges U.K. garage and R&B — ‘U Got It Bad’ will likely introduce Usher to a new continent of fans — a strategy of which Promo Only is proud to be a part.
